RECIPE OF THE WEEK: Chocolate Avocado Cookies
Everyone needs a sweet treat once in awhile, right? Here’s a way to not completely throw yourself off the wagon with these avocado chocolate cookies. Not only do they taste great, but you’re also getting the health benefits of avocado and banana and they’re easy to make and delicious!
•¼ cup coconut sugar
•½ ripe banana
•½ cup dark cocoa powder
•¼ cup dark chocolate chips or chunks
•½ tsp. baking soda
Preheat oven to 350 degrees. In a medium bowl, mix together the avocado, coconut sugar and banana until smooth. Add in the egg. Mix in the cocoa powder and baking soda and then stir in the chocolate chips/chunks. Place spoonfuls of cookie dough on a baking sheet with parchment paper making sure to flatten them out a bit with the back of the spoon. Bake 8-10 minutes or until the cookies don’t stick as much to the paper. Let cool completely before serving. Store in an airtight container in the fridge.
