RECIPE OF THE WEEK: Mexican Quinoa Burrito Wraps
Mexican food tends to have a bad rep for being unhealthy, but it can actually be quite the opposite with a few small changes. This Mexican quinoa burrito wrap is packed with protein, important nutrients, healthy fats and will keep you feeling satiated and is very flavorful.
1 cup cooked quinoa
15 oz. (1 can) black beans, no salt added, drained and rinsed
7 oz. roasted fresh corn or if frozen, thaw out
1 onion, chopped
1 chili pepper, chopped
1 red pepper, diced
1 avocado, thinly sliced
1 cup of salsa (spiciness depends on your taste)
½ cup sour cream
4-6 organic whole wheat wraps
In a saucepan, heat 1 tbsp. olive oil and add the onion for 3 minutes. Then add the red pepper and chili pepper until softened. Then add corn just to warm up.
Warm up the whole wheat wraps in the microwave for 30 seconds wrapped in moist paper towel.
On a wrap, fill will quinoa, beans and veggies then top with 2-3 slices of avocado, a spoonful of salsa and a small dollup of sour cream (if desired).
Wrap it all up and enjoy!
