RECIPE OF THE WEEK: Raspberry Almond Butter Smoothie Bowl
Ah breakfast ... the most important meal of the day. I just love breakfast. What I love even more is that you can pack SO much nutrition into your breakfast that it can really set you up for a great healthy day ahead. I've been really into smoothie bowls lately and I decided to see if my kids would give it a try and low and behold ... THEY LOVED IT!!! My daughter even said it was like eating ice cream for breakfast ... UH OK .. win / win I'd say!
This Raspberry Almond Butter Smoothie Bowl packs in so many nutrients through nuts, seeds, dairy, veggies and fruits! And it tastes SO good! The best part ... it is EXTREMELY easy to make. Throw it all into a blender, blend until smooth, pour into a bowl and put some toppings on and voila .. you're done!
1 large banana
1 1/2 cup of raspberries (fresh for the topping, but frozen is fine for the smoothie)
1/2 cup almond milk
1/4 cup nonfat plain greek yogurt
2 Tbsp. almond butter
1 Tbsp. honey
1/2 cup frozen spinach
2 Tbsp. Shredded coconut
2 Tbsp. low fat granola
Blend together banana, 1 cup of the raspberries, almond milk, yogurt, almond butter, honey, and frozen spinach until smooth. You may need to add more almond milk to get it to blend but do a little at a time. You want the mixture to be thick like soft serve.
Pour into bowl(s) and top with remaining raspberries, granola and shredded coconut and a drizzle of honey if you wish.
