Recipe of the Week: Baked Zucchini Rounds
For an easy side dish that the kids or anyone will love, try these baked zucchini rounds. They are SO easy to make, taste delicious and are nutritious. It is a great source of Vitamin C which acts as an antioxidant and is essential to brain health, and Thiamine and Riboflavin which both help with energy metabolism.
• 2 Medium Sized Zucchinis
• ½ cup of freshly grated Parmesan cheese
• Salt & pepper
Preheat oven to 425 degrees and line a baking sheet with foil. Wash and dry zucchini, and cut into 1/4-inch thick slices. Arrange zucchini rounds on prepared pan, with little to no space between them. If desired, lightly sprinkle zucchini with salt and fresh ground black pepper. Sprinkle a thin layer of Parmesan cheese along the zucchini. Bake for 15 to 20 minutes, or until Parmesan turns a light golden brown.
