Recipe of the Week: Balsamic Peach Chicken This
is a great dish for summer when peaches are in season and you’re looking for a
light, fun meal! This goes great with a side of asparagus lightly grilled with
olive oil and sea salt and/or over quinoa to soak up the sweetness of the
peaches and add an extra protein boost! 2 Tbsp
olive oil 1/2
medium yellow onion, sliced (about 3/4 cup) 4 (5 oz)
boneless skinless chicken breasts Salt
and freshly ground black pepper 2
cloves garlic, minced 1/3
cup balsamic vinegar 1 Tbsp
honey 2
cups sliced firm but ripe peaches (about 2 medium) 1
(14.5) oz can
diced tomatoes, drained
1/4
cup thinly sliced basil ribbons Directions: Heat olive oil in a pan over medium-high
heat. Add onion and saute 3
minutes. Add chicken, seasoned with salt and pepper and cook about 2 minutes
each side. Remove chicken from pan and transfer to a plate. Add garlic to pan
and saute 20
seconds then add balsamic vinegar and stir until reduced by half, about 1
minute. Stir in honey then add in peaches and tomatoes. Return chicken to pan
and cover reducing heat to medium-low and allow to simmer until chicken has
cooked through. Top with fresh basil and serve warm. |
