RECIPE OF THE WEEK: Healthy Valentine's Day Breakfast
Want to impress your loved ones with some healthy and fun recipes for V-Day? Start out the day with a heart shaped egg in a basket with sprouted grain or whole grain toast and heart-healthy avocado!
Heart Shaped Eggs in a Basket
4 Slices of organic sprouted grain or whole grain bread
4 organic eggs
1/4 cup Parmesan cheese, shredded
1/2 of an avocado, pitted and sliced thin
Salt and pepper to taste
Coconut oil, for cooking
Using a heart-shaped cookie cutter, cut a heart out of each slice of bread. Heat coconut oil in a non-stick pan and place the bread slices down in the coconut oil. Place the heart cut outs next to them in the pan. Crack an egg into each heart shape and let cook until the egg whites are cooked through. Sprinkle with salt and pepper. Then gently flip the bread with eggs onto the other side as well as the hearts and let cook for about a minute more. Sprinkle with parmesan cheese before removing from the pan. Remove from pan and serve with sliced avocado on top of each egg.
